Todays recipe is a super yummy meatloaf filled with flavourful smoked ham and oozing melted cheese, served with crispy roasted veggies, all made on one baking tray. Drizzle it with cream sauce and you have a comfort dish that almost certain guarantees that you end up in food coma. The recipe serves four.
Filled Meatloaf
Let’s start with the meatloaf. This is a great basic recipe that adapts easily (why not fill it with feta cheese, sun dried tomatoes and olives the next time).
- 500 g ground beef
- 1.5 tbs corn flour
- 2 eggs
- 1 granulated garlic clove
- 1 tsp salt
- Freshly grounded black pepper
- 4 slices of smoked ham
- 1.5 dl shredded mozzarella cheese
- 1 tsp Japanese soy sauce
Preheat the oven to about 225°C, or about 380°F. Mix ground beef with corn flour, eggs, garlic, salt and pepper. Turn the meat mixture on a baking paper and, with wet hands, pat the mixture into a rectangle (approximately 20 x 30 cm). Add the ham and sprinkle the cheese on top. With the help of the baking paper, make a roll (like a Swiss roll) and seal the edges carefully. Move the roll to a lined baking tray, making sure there are room for the veggies. Sprinkle with Japanese soy sauce.
Roasted veggies
With the meatloaf prepared, let’s continue with the veggies.
- 6 potatoes
- 2 carrots
- 2 red onions
- 1 tbs olive oil
- 1 tbs dried thyme
- Salt & black pepper
Peel and cut the potatoes and carrots into chunks. Slice the onion into wedges and add all the vegetables onto the baking tray. Add the olive oil, salt and pepper. Bake everything for 40-45 minutes. Stir the vegetables one or two times during that time.
Cream Sauce
While the meatloaf and veggies are cooking, start making the sauce. You’ll need:
- 2 tbs butter
- 2 tbs flour
- 1.5 dl heavy cream
- 1-2 tbs reduced beef stock
- 4-5 dl water
- Freshly grounded black pepper
- 1 tbs Japanese soy sauce
- 1 tsp balsamic vinegar
- salt to taste
Melt the butter in a pot (medium heat), add the flour and whisk together. Let the mixture turn slightly golden. Add the cream and whisk. Let the mixture thicken and then add water to a nice sauce texture. Add the stock, black pepper, soy sauce and balsamic vinegar. Taste with salt if needed. Let the sauce cook for five minutes on low heat, making sure that it not burns.
Let the meatloaf rest 5 to 10 minutes before serving. Loosen your pants and dig in!
