Some of the best food is not just delicious, it’s easy to cook as well. This chicken stew with asparagus and a creamy sauce is one of those dishes. Yummie, fresh and comforting, all in one plate. This recipe serves 3-4. Let’s cook!
Ingredients
- 500 g skinless chicken breasts
- 200 g green asparagus, fresh or frozen
- 1 tbs olive oil
- 3 dl cooking cream or half and half
- 0.5-1 tsp balsamic vinegar
- 0.5-1 tsp Japanese soy sauce
- 1 granulated garlic clove
- 1/2 tbs cornstarch (mixed with water to a slurry)
- 1 tsp dried tarragon
- Salt & pepper
Divide the chicken into strips, fry in a deep pan in olive oil until golden. Meanwhile cut the asparagus into smaller pieces (2-3 cm). Add the asparagus into the pan and fry for 1-2 minutes. Add the cream, garlic, tarragon, balsamic vinegar, soy sauce and some of the cornstarch slurry. Bring to a boil. Add more of the slurry if needed, the sauce should be the texture of normal gravy. Taste with pepper and salt if needed.
